Abstract Hesperidin is treated with aqueous alkali and then hydrogenation is applied to produce hesperidin dihydrochalcone. This intermediate is refluxed with dilute aqueous hydrochloric acid to split off the rhamnose portion of the sugar moiety of the intermediate, yielding hesperetin dihydrochalcone glucoside, a compound which exhibits intense sweetness.
